Home Tommy Campbell – Butcher
Butchery is in Tommy’s blood. He started out at the tender age of ten helping to make sausages in his grandad and uncle’s shop in Paisley, Scotland, and sharpened his craft as a teenager after his family moved to Cornwall.
The much-travelled butcher, who is also a qualified baker and sushi chef, joined the Great Cornish Food Store in 2021 and now prepares a wide range of meat alongside one other butcher.
Beef comes in carcasses from the renowned Launceston-based butchers and farmers Philip Warren.
Our beef all comes from the renowned Launceston-based butchers and farmers Philip Warren & Son.
Whole lambs and pigs are delivered from JV Richards based down the road at Perranwell and the seasonal game we sell includes venison from Prideaux Place.
Whatever the animal involved, the basics of butchery are the same.
I really enjoy sharing some of the knowledge and skills I learned as a boy in the family shop. That could be showing a group of children visiting the store how to prepare meat from a pig’s head (pork is my favourite meat to work with) or going out to a school and demonstrating knife skills that will help the students either in their career or in their own cooking.
As well as the quality of the produce, it’s our customers and team who make the store a special place. The big difference is that you are not working here because you have to, you’re working here because you want to.
